Risotto Ristonchi (inspired by the movie Toscana)

If you’ve seen the movie Toscana maybe on Netflix, you know it’s the story of a Danish chef who falls in love with the culinary traditions of Tuscany. The warm, sun-soaked landscapes, rustic farms, and passion for local cooking fill every scene, taking us into a world of simple but extraordinary ingredients.

One of the film’s standout dishes is the risotto the main character prepares – a dish that combines modern technique with a deep respect for tradition. Risotto Ristonchi is a celebration of Italian cuisine, made with just a few ingredients but packed with flavor and emotion.

I’ve recreated this risotto based on the ingredients seen in the movie: the subtle sweetness of shallots, the deep richness of red wine, and the abundant use of Parmigiano Reggiano. Here’s the recipe so you can bring a bit of that Tuscan magic into your own kitchen!

 

Ingredients (serves 4):

  • 320 g Carnaroli rice
  • 2 shallots, finely chopped
  • 1 garlic clove, minced (optional)
  • 1 glass of red wine (preferably a Tuscan Chianti)
  • Vegetable broth (about 1.5 liters)
  • 150 g  Parmigiano Reggianograted (I recommend a 36 mesi)
  • Extra virgin olive oil as needed
  • 50 g butter for finishing
  • Salt and pepper to taste
  • Fresh thyme or rosemary (optional)
  • Shavings of black truffle (optional)

Preparation:

  1. Sauté the shallots gently in olive oil until soft and translucent, allowing their delicate flavor to develop.
  2. Toast the rice with the shallots for a couple of minutes until lightly golden, giving the grains a nutty aroma.
  3. Deglaze with red wine, letting it reduce as the rice absorbs the wine’s rich, fruity notes.
  4. Gradually add the broth, stirring constantly as you cook the rice to a perfect al dente texture – creamy but with a slight bite.
  5. Stir in butter and Parmigiano Reggiano, letting them melt into the risotto for a luxuriously creamy finish.
  6. Garnish with freshly ground black pepper, aromatic herbs, or a few shavings of black truffle for an indulgent touch.
