Spaghetti with cherry tomatoes, breadcrumbs, capers, anchovies and fresh oregano

Today I want to tell you about a simple recipe that captures all the beauty of the Mediterranean in one dish. For me, it is an excellent representation of how centuries of experience and tradition have shaped simplicity into elegance, art and pure taste. In a dish like this, which celebrates Mediterranean-inspired simplicity, the choice of ingredients is crucial. The extra virgin olive oil must be of high quality, as it binds and highlights all the other ingredients. A fragrant, fruity and rich oil (like Organic Extra Virgin Olive Oil BIO) transforms a simple dish into a taste masterpiece.

Furthermore, the fresh and ripe cherry tomatoes, the freshly picked oregano and the salty capers are the protagonists of the dish. Each ingredient contributes its own note to the overall taste, creating a perfect balance between sweetness, salt and aroma. Despite the simplicity of the preparation, the care in the choice of ingredients elevates this dish to an authentic and refined sensory experience.

Ingredients (for 4 people):

  • 320g spaghetti
  • 250 g cherry tomatoes
  • 4 anchovy fillets in high-quality oil
  • 2 tablespoons capers in salt (well rinsed)
  • 4 tablespoons breadcrumbs
  • 1 clove of garlic
  • 1 bunch fresh oregano
  • High-quality olive oil (plenty)
  • Salt to taste
  • Chili (optional)

Procedure:

  1. Toast the breadcrumbs : Heat a pan with a little olive oil. Add the breadcrumbs and toast over medium-low heat until golden. Set aside to retain the crispiness.

  2. Prepare the Sauce : Add a generous amount of olive oil to the same pan and a crushed clove of garlic. Simmer over low heat until the garlic turns golden. Remove the garlic. This process brings out the aroma of the olive oil, which gives the dish its character.

  3. Dissolve the Anchovies : Add the anchovy fillets to the hot oil and stir until they dissolve completely, forming a flavorful paste. The anchovies add depth and complexity to the dish.

  4. Add Tomatoes and Capers : Cut the cherry tomatoes in half and add them to the pan. Simmer over medium heat until they are slightly soft but still crisp. Add the rinsed capers for a salty kick.

  5. Cook the Pasta : Meanwhile, cook the spaghetti in plenty of salted water. Drain when al dente, reserving some of the cooking water.

  6. Finish the dish : Mix the spaghetti directly in the pan with the sauce. Add a little cooking water and extra olive oil to bind the dish together.

  7. Add Breadcrumbs and Oregano : Before serving, sprinkle with toasted breadcrumbs and fresh oregano to add a crunchy and aromatic dimension.

  8. Serving : Serve immediately with a final drizzle of extra virgin olive oil to enhance the flavors. Optionally, add a little chili for a stronger flavor.
