Origin: During the 30 months of maturation, our Parmigiano Reggiano acquires a unique character and depth of flavor that sets it apart from younger ripenings. This period allows the flavor and texture of the cheese to develop to perfection, resulting in a cheese with an intense nutty flavor, grainy texture and complexity that can only be achieved through patience and traditional craftsmanship.

This cheese is the result of a carefully monitored process that follows strict traditional methods. Methods that Luca and the other cheesemakers still apply in a perfect balance between tradition, experience and passion. It all starts with milk from local cows grazing on the lush fields of the region. The milk is then brought to the dairies, where it undergoes a careful and precise ripening process under the expert supervision of the cheesemakers.
