Origin: During 30 months of maturation, our Parmigiano Reggiano acquires a unique character and depth of flavor that distinguishes it from younger maturations. This period allows the flavor and texture of the cheese to develop to perfection, resulting in a cheese with an intense nutty flavor, grainy texture and complexity that can only be achieved through patience and traditional craftsmanship.

This cheese is the result of a carefully monitored process that follows strict traditional methods. Methods that Luca and the other cheesemakers still use in a perfect balance between tradition, experience and passion. It all starts with milk from local cows that graze on the lush fields of the region. The milk is then brought to the dairies, where it undergoes a careful and precise maturation process under the expert supervision of the cheese makers.

Aroma: On the aroma of Parmigiano Reggiano aged 30 months, you can expect a welcoming aroma of nuts and spices that awakens the senses and hints at the complexity of the cheese.

Taste: At the first bite of Parmigiano Reggiano aged 30 mesi (how you say months, in Italian) you will be greeted by a deep and rich taste where the distinctive notes of nuts dominate.
