Its name comes from the dialectal verb "cappuliare," which means to chop or grind, and perfectly represents the process through which the sun-dried tomato is transformed into a unique and versatile condiment.
The rhythm of the sun, nature’s perfection
Only the finest 100% sicilian Pachino cherry tomatoes are selected for their natural sweetness and intense taste. The tomatoes come from the farm or another local sicilian tomato producer. Once harvested, they are carefully hand-cut, lightly salted, and left to dry under the blazing Sicilian sun, where temperatures reach up to 45°C. This slow, natural drying process enhances the tomatoes' flavor, creating a unique depth and complexity. To produce just 100g of our Capuliato, a full kilogram of fresh tomatoes is required – proof of the uncompromising quality in every spoonful.
Craftsmanship and tradition in every detail
Once the tomatoes reach the perfect balance of sweetness and intensity, they are carefully stored in refrigerated conditions to preserve their natural aromas. They then undergo a meticulous process: boiled at exactly 100°C, dried with clean cloths, finely chopped, and blended with the finest extra virgin olive oil and a carefully selected mix of Sicilian spices – including fennel seeds and fresh oregano. This gives Capuliato its distinctive flavor profile, rich in nuances and tradition.
